The Occasional Vegan : Roasted Vegetables

I’ve always loved various root vegetables. This one is a mixture of potatoes and sweet potatoes. I roasted them together with onions, whole garlic cloves (with skins) and red peppers. Seasoned with salt and pepper, olive oil, a pinch of chilli powder and a scattering of sage leaves. A simple and easy, throw-everything-in-the-pan-and-roast dish.

The Occasional Vegan : Lentil Tomato Soup

Most of the time, I will use chicken or beef stock cubes when making soups or stews. But since I’m making this vegan, I went with vegetable stock cube instead. I’m not really sure if the stock cube I used is vegan, but it was definitely vegetarian. So I’m ok with that. A touch of ground coriander and cumin gave it a little spice kick.

The Occasional Vegan : Pumpkin Walnut Bread

Pumpkin Pie Spice Blend is all things good and fragrant.
Allspice, cinnamon, cloves, ginger and nutmeg . I made it myself because really, if you can stir, you can make pumpkin pie spice.

The Vegan Pumpkin Walnut Bread is really yummy. No eggs and butter. Only vegetable oil and sweetened with brown sugar and maple syrup. And even more delicious the next day when lightly toasted.

The Occasional Vegan : Tofu and Quinoa Salad

This salad contains ingredients I love : Tofu, Quinoa, Pine Nuts and Edamame Beans. I tossed some rocket leaves too. And speaking of Edamame, I just snacked on a huge bowl of them. I only ate the beans although I’ve heard that the pods can be eaten as well. Not really into the chewy texture of the pods but the beans, yes please!

The Occasional Vegan : Banana Ice-Cream

Just 2 ingredients : frozen banana and almond milk. Blend and enjoy. I think I put a little too much milk, so the ice-cream turned out a little watery. Still good!

Tip : Freeze ripe bananas individually for a few hours. After they have harden, put them in resealable bags. That way, you can be sure you have frozen bananas for quick smoothies, nice and frothy. Yum!

The Occasional Vegan : Quinoa and Bean Salad in a Jar

To me, ingredients and cooked food stored in mason jars are so pretty to look at. I came across this idea of a salad while googling (can’t even remember what I googled). I love this and to be honest, this picture always makes me smile.

The dressing of the salad goes into the bottom of the jar, so that it can be poured over the salad as I dump the whole thing in a bowl. Salad leaves should be placed on top, away from the dressing so it won’t get soggy. I like the flavor of honey-mustard dressing, but in this case, honey is replaced with maple syrup.

I always must have some sort of meat in my salads. And since I wanted to keep this vegan, I opted for quinoa instead. Ahh quinoa! My new love.

The Occasional Vegan : Homemade Granola

I’ve made Granola so many times. Pretty basic and straightforward : Rolled oats and variations of nuts and dried fruits. And all of them are sweetened with brown sugar and honey. I’d figured, let’s give bees a break. So I used pure maple syrup instead.
Not much different I think, same delicious flavor. And since I’m not a vegan, I can switch from honey and maple syrup back and forth, as and when I like. Love the freedom.
