Aussies rock! Quite frankly, AC/DC is one of the best acts that came out of Australia, in my humble opinion. And what’s better, the song was featured in one of my all-time favorite movie, School Of Rock. Jack Black and those talented kids, all grown up now. The most successful would be Miranda Cosgrove, who had a huge TV show, iCarly, on Nickelodeon. My kids and I love that show!

Homemade Blueberry Vanilla Bean Coffee Cake

I had a vanilla bean to use up, and had been wanting to make this for a long time. I followed the recipe here by Laura Vitale. I always love her recipes!

This cake had a streusel topping, made with sugar, butter, flour and a pinch of cinnamon. It made the top so crackly and crunchy. To die for!

Please take a moment to admire how beautiful the cake looked. Wow!
Served with a cup of coffee (hence the name “coffee cake”, cake eaten with coffee), and I’m good.

I will always have fond memories of growing up when I think about Guns N Roses. What a band! Quite possibly my favorite back in the late 80s, almost until the time of the feud and they disbanded. I still follow Slash on Facebook and Twitter. He’s an awesome musician and individual.

Vanilla Pods

Vanilla Pods are so expensive here and pretty much everywhere in the world. And I have been afraid to use them, simply because it is expensive and I’m afraid I’d mess up. And i had thought Vanilla Pods can never be mine. This is my first time buying. I’d figure, if I really mess it up, I vowed never to use them again.

I think these are truly great ingredients. Smells so AMAZING! Maybe I’ll just use them as perfume.

Vanilla Bean Scone

I chose a simple recipe from Laura Vitale. I love the look of these scones, with specks of vanilla bean on them. That just mean, don’t mess with these scones! Good stuff in it!

A scone (or two), a cup of tea and I’m happy..

Def Leppard‘s album, Hysteria, was the very first rock album that I bought, back in 1988. My love for rock music was fueled by the fact that I was getting sick of teeny bopper pop music. GNR, Bon Jovi, Skid Row were always plugged into my ears all day. Good times, good music.

Homemade Coconut Macaroons

These Coconut Macaroons are oh so sweet! Shredded coconut mixed with sweetened condensed milk and some egg whites folded in. They are delicious! Simple to make and too good to be true!
And to make them extra special, drizzle melted chocolate over the top after they are baked. I’m impatient. I want them in my belly as soon as they are out of the oven! Hehe!!

One thing to remember, is to make sure to put parchment paper on the baking sheet because these cookies will stick no matter how “non-stick” your baking sheets are.

Tea And Sympathy

I remember loving this song when it came on the radio in the late 90s. A nice melody, and it makes me smile. Sometimes what we need to feel better when life’s challenges get too overwhelming is a listening ear, some tea and sympathy. Even though it may come from a stranger on the bus or a waitress at the coffee shop. Of course we don’t expect them to help us solve our problems. Just a little sympathy, compassion and maybe a reassuring word or two are all it takes.

Homemade Cherry Cake

It was one of those days when I didn’t have a proper breakfast or lunch. And I had wanted to bake something, a sweet treat. So I thought, hmmm maybe a Cherry Cake for tea in the afternoon would be wonderful.

It is a simple recipe from Laura In The Kitchen. A sponge cake with Maraschino Cherries throughout and slivered almonds on top. It just sounds delicious and promising!

True enough, it looked beautiful. A little dusting of confectioner’s sugar after it was baked and we have a winner!

I hardly have tea in the late afternoons. When I do, why not make it amazing? Who says tea have to be scones or cucumber sandwiches (I’m not a fan of cucumber anyway) or have to be served in a fancy tea set? Just a slice (or two) of the Cherry Cake, tea in a plain white Ikea mug and I’m good.

American Pie

Don McLean‘s magnum opus. I remembered hearing this song for the first time in the 90s, immediately fell in love with it and went out and bought the CD soundtrack for the Tom Cruise movie Born On The Fourth Of July. In the lyrics, “The day the music died” refers to the tragic plane crash which killed Buddy Holly, Richie Valens and The Big Bopper.

Homemade Banana Cream Pie

I love this! First time making and I took some shortcuts to make it easier. I was going to use a store-bought graham cracker crust but I couldn’t find any at a few supermarkets I went to. And I have never been able to find graham crackers where I live. So I used bashed-up digestive biscuits with a little melted butter for the crust.

Bananas are peeled and sliced and mixed with a little leftover caramel sauce from a bottle, the one we eat ice-cream with. Dumped the caramel-coated bananas onto the crust which had a chance to chill in the fridge for a few minutes.

Then came another shortcut, vanilla pudding cups. I was not in the mood to make pastry cream. Egg yolks, milk, stirring and stirring over the stove. Nope! Not today!

And finally to finish it off, I decided to put in some muscle and whipped up some cream and confectioner’s sugar.

Looks divine!

Yeay! Mine! Mine! Mine!

Loudness, probably the best metal band to come out of Japan. I wasn’t really into them in the 80s. Then I heard a really good live version of So Lonely, which is a reworked version of their earlier song Ares’ Lament. Ichiban! Hait!!

I’m in love with these Japanese rice cakes! These are filled with peanut, red bean, and sesame pastes. I’m more partial to the peanut and red bean, and I don’t really like the sesame ones. And these are small and cute, a greedy person could probably eat this in one big bite.

And because I think these are cute, I nicknamed my youngest daughter, Marissa, my little mochi. Because she is just that, cute!

Lady Marmalade

Oh man! This song is as old as me, literally! Yes, I occasionally do enjoy a good oldie, because I’m an oldie myself. Those were the days when people record songs with their real voices instead of being digitally enhanced. Which is why we see a lot of artistes these days, who sound great in the record but horrible when they are live on stage.

I also enjoy the quite recent version of Lady Marmalade done for the movie Moulin Rouge. And I do solely for only one reason. Christina Aguilera! What a voice! Love that girl!

French Macaroons

FRANCE!! Paris, Eiffel Tower,River Seine, Champs-Élysées, Notre Dame, Louvre and of course French Macaroons!
I have been wanting to make these for quite some time. I’ve heard stories about how difficult it is to make macaroons. Must do it properly, the temperature and humidity of the kitchen must be just right, blah blah blah. Sacrè bleu! Why make it so difficult? Au contraire, these turned out fine in my “anything goes” kitchen.

If you Google images of macaroons, you will see gorgeous displays of them, all perfectly uniform-sized. Mine are not. Of course they are not, they are homemade! Some have cracks, some bigger than others. There is no need for me to make them as beautiful as the professionally made ones because I’m not baking to impress anyone. That’s the beauty of cooking and baking at home. Absolutely no pressure to make them perfect.

And finally, the pièce de résistance, I chose chocolate ganache for the filling. So so good! I will definitely make this again. Manifique! Délicieux!
