Linzer Cookies

I love the look of Linzer Cookies. Two cookies sandwiched together with jam in the centre and one of the cookies has an hole in the middle so that the jam shows through. Confectioner’s sugar is sprinkled on top but this has to be done before sandwiching the cookies. Otherwise, the jam will also get covered in sugar and it is not a Linzer Cookie if you can’t see the jam.

The cookies in this recipe have just a touch of sugar in it, which is perfect because there will be jam in the middle and confectioner’s sugar on top. Those will bring the sweet factor up a notch for the whole Linzer Cookie experience.

I don’t think I’ll be making this anymore. It is tedious and time consuming. And I only like to make quick and easy recipes. I made a full batch but only used half to make Linzer Cookies. Stay tuned to see what me and the kids do with the rest of the cookie dough!
