No, this is not a tribute to Jennifer Lopez. I’m not really a huge fan although I love her portrayal of Hispanic singer Selena in the movie “Selena”. I just thought the title of this post is funny. And no, this is not cooked by anyone named Jennifer. Heh!
Lopes (yup, pronounced as the aforementioned celebrity’s last name) is a sweet snack made from glutinous rice. It is cooked in banana leaves which are made into cone shapes and hence, gave the lopes its signature triangle shape. After it is cooked and cooled, it is dredged in grated coconut and drenched (or some just drizzle) with gula melaka (palm sugar) syrup.
Some people made long tubes of lopes and slice it. Doesn’t really matter. But the classic is still the triangle-shaped ones.
