Lemon Tree

28 Aug

Disclaimer : The title refers to the old folk song by Peter,Paul & Mary. NOT, the irritating 90s dirge by Fool’s Garden. Ouch! My ears! My ears!

Lemon Cupcakes with Lemon Cream Cheese Frosting

Lemons, the colour of sunshine. These are so cute! The lemon slices look like shark’s fin jutting out of the ocean. Ok THAT is not cute. But these Lemon Cupcakes are. I was genuinely surprised when I tasted them. The lemon zest and juice added to these gave a hint of lemon flavor. Not overpowering but you can definitely taste it. It’s delicious!

And the Lemon Cream Cheese Frosting is a little too rich, so I didn’t go overboard with it. A little goes a long way.

Love the lemon-iness of this!

Recipe here!

I can’t stand it! They played the song to death on local radio. I’m glad they were a one hit wonder. No other “hits” from them. Haha!!

Haha! Well, I was at home that day, nursing a sick child. So after he took his meds and went to sleep, I baked. These took hardly any time.
