Beef Casserole with Garlic-Roasted Mashed Potatoes

I first made this last year. And since then I think I have made it a couple more times. A warm, comforting, homey dish. The kind of dish to have after a bad day, like a badly needed hug or a soothing word or two. That’s how I feel about it.

This is a recipe I took from Nigella Lawson. The cut of beef used was chuck tender, cubed and seasoned with salt, pepper, allspice and a bit of flour which thickened the sauce. The sauce was originally made from dark and bitter stout. I substituted that completely with beef stock cubes. And a surprise ingredient, well for me it is, orange juice and zest. It gave the dish a “round sharpness”. Whatever that means, it tasted good to me!

The casserole will take a long time to cook, close to 2 hours on the stove with a low flame. The beef became so tender. And the mashed potatoes were so perfect with it.

    you described this very poetically…loved this post, as today, it is dreary and rainy here, and not in that good way…so, I loved the feel of warm food and hugs from it.

    ahhh i’m a HUGE FAN of nigella lawson haha i’ve never ever been tempted to try cooking anything but i loooove watching her shows.. the mashed potatoes look soooo fluffy and good haha is the orange thing sweet potato?

      Some of her recipes are easy, especially those from her Express series. Fast fast fast! Nope those are carrots. Funny thing you mentioned sweet potatoes. Nigella made the mashed potatoes as a ” double potato mash”, combining white potatoes and sweet potatoes. I’ve tried making it. Delish!!
