I did a post earlier on Chai Tao Kway or Carrot Cake. I guess you can say Lontong Goreng is the Malay version of it. But mine is a motley mix of leftovers’ haphazard conglomerate! (if that made any sense!)
Yes, this whole dish is made from leftovers! The Lontong or rice cakes were from dinner at my parents’ over the weekend. Kept well in the fridge for a few days. The spices were from Sunday’s fried rice, which I made a little too much. And I had some leftover roast chicken from last night which I’ve thrown into the mix.
And voila!! A free dinner! Especially at the end of the month when we have not yet received our paychecks, anything free is warmly welcomed.
