I made these Pumpkin Cupcakes about a month ago. I only used half a can of pumpkin purée. And since I have the other half in my fridge, I might as well use them. But no Cream Cheese Frosting this time.
Some of you might remember the Hoodwinked fiasco. I got cheated by a recipe that promises the grandeur of a dozen muffins but I got 11 instead. I’m still bitter about it.
And when these cupcakes came out of the oven, they looked utterly gorgeous!
The cupcakes are so soft and moist, with cinnamon and allspice added for a little bit of pep.
