For me, Laksa is a local indulgence. Noodles swimming in a thick, rich and spicy coconut milk gravy. And with other ingredients too, like cockles, sliced fish cakes, dried tofu and hard-boiled egg. Finally a little sprinkling of “daun kesum” or “laksa leaf” or “vietnamese coriander” or “Persicaria Odorata” (to be real technical) for a little zingy taste. All that equals to a happy bowl and an even happier eater.
This dish is definitely not, and I repeat, NOT for people on a diet. The gravy itself is sinful. High in cholesterol and fat, I guess that’s what makes it taste so good. Hehe! And for me, the best part about this dish is the dried tofu. It soaks up the gravy like a sponge and when you bite into it, there will be a flavour explosion in your mouth. Wow!
I certainly don’t eat this everyday. And at the risk of repeating myself, once a while it’s nice to indulge. Oh well, I’ll do an extra hour on the treadmill. (if I had a treadmill).
