Sometimes, it is nice to eat something light after a series of heavy eating or a weekend of gastronomic adventures. Or when I feel guilty for having that huge sinful slice of cheesecake. I repented by eating something light all day the next day.
It was quite intimidating when I saw the phrase “Homemade Granola”. It sounded so complicated to make and I’m sure the process will be long and tedious. Turns out, it’s not at all. All the ingredients gets mixed up in a huge bowl. Rolled oats, assorted nuts (I used walnuts and almonds), vegetable oil, cinnamon. And sweetened with brown sugar and a little honey. Then baked for about 45mins in a low oven and every 10mins or so, take it out and give it a quick stir. Then dried fruits (raisins) were added as soon as they are done. See! Not difficult at all.
The recipe yielded a lot, about 6-7 cups of granola. I ate in a bowl with milk. And I made some Granola Muffins with it. It is also delicious as a parfait, layering granola, yoghurt and berries macerated in orange juice.
