Ahhh muffins! Best eaten while they still have the warm breath of the oven in them. I just got these muffin pans. Previously I was using standing muffin cups. Came home with excitement of making a batch. You know, in baking, you have to follow the recipe properly. I did. 2 cups of flour means 2 cups of flour. Not a pinch more or less. If the recipe says 300 chocolate chips, you can bet that I will count. Not 299. Not 301. But 300. Which reminds me of something I made, can’t remember what, and it says 2cm of ginger. I took out a ruler!
Anyway, back to the muffins. It says the recipe makes 12. I got 11. Where’s my 12th muffin??? I felt cheated. I have done everything perfectly! And i got 1 less muffin! Well, somebody’s gotta pay! And If you think I’m acting like someone who has lost her muffin, well I am! Sheesh!
Ok enough tirade. Quick tip, toss the chocolate chips, or blueberries, with some of the flour. It ensures that the choc chips do not sink to the bottom of the muffin, and will be spread evenly throughout. Also, adding a little sour cream or buttermilk makes the muffin moist. And yummy!
